Brice cultivates 3.8 hectares in Écueil and Sacy across a mosaic of twenty small plots.

He has no set method, but a clear guiding principle: supporting the vine without, never forcing it, letting it set its own pace — just a little slower.
He does not use herbicides, ploughs lightly the soils, lets natural cover crops take root, and carefully avoids overfeeding the vines to preserve a certain tension.

What matter is the right balance. Observation always outweighs dogma.

 

Ripeness is sought, but never with excess. Brice harvests when the juice already express depth, but before heaviness. What he seeks is natural density, drinkability, harmony.
